It’s my day off before I work 3 12s in a row so I decided to make my son some banana mini muffins since he loves bananas a lot. I have been baking a lot lately which helps me kind of ease my mind from stress. lol This recipe is kid approved and very easy to make.
If you are craving for something sweet and healthy and/or if you have kids at home, this one is for you. Easy delicious breakfast muffin and snack that is good for everybody! It will only take you less than 30 minutes of your time.

Easy Banana Chocolate Chip Mini Muffin

Ingredients
3-4 ripe bananas
1 egg
1/3 cup canola oil/coconut oil or apple sauce
3/4 cup sugar
1 1/2 cup flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/4 tsp nutmeg
1/4 tsp cinnamon
1 cup chocolate chips
1 egg

Directions
1. Preheat oven at 375F. Line mini muffin pan with mini cupcake liners.
2. In a medium bowl, mix the flour, baking soda, baking powder, salt, nutmeg and cinnamon.
3. In a separate bowl, mash ripe bananas using a fork then add egg, sugar and oil. Mix the dry ingredients.
4. Add the chocolate chips into the mixture.
5. Scoop a tablespoon of batter into paper lined muffin pan cups.
6. Bake for 11-12 minutes.
